Being You

I don’t want other people deciding who I am.

I want to decide that for myself.

It’s mental health awareness week and I am sharing some tips to help everyone with their mental health. Remember we all have mental health and we all have to keep it healthy. 💛

That you will never be perfect,

life will always have challenges,

and other people will

disappoint you sometimes.

Acceptance is the first step toward peace.

BBQ Pulled Pork

Family favorite this BBQ Pulled Pork is easy to make and delicious to eat.

Pulled Pork Spice Rub Mix

1.5kg Pork Shoulder

  • 1tbsp Golden caster sugar
  • 2tsp Paprika
  • 1 tsp Onion powder/granules
  • ½ tsp Cumin
  • ½ tsp Dijon mustard
  • 1tsp Salt
  • Pinch black pepper
Cooked pork shoulder in the homemade BBQ sauce

BBQ Sauce

  • 2 Garlic cloves crushed and chopped
  • 125ml / ½ cup Apple cider vinegar
  • 375ml / 1 ½ cups Tomato Ketchup
  • 110g / ½ cup Golden caster sugar
  • 1tsp Dijon mustard
  • 2tsp Onion powder/granules
  • 1tsp Paprika
  • 1tbsp Worcestershire Sauce
  • Pinch black pepper
Freshly pulled pork in a dish

  1. Mix all the rub ingredients in a large bowl.
  2. Remove all the string from the pork shoulder then add to the rub mix. Completely cover the meat in the rub and leave for 20 minutes (longer if you wish).
  3. Add all the BBQ sauce ingredients to a large heavy dish/saucepan that has a tight fitting lid and mix.
  4. Add the pork shoulder to the large heavy dish/saucepan.
  5. Place in an oven at 140°C/Gas 4 for 4 ½ hours (do not preheat the oven).
  6. Remove the pork and place in a dish; using 2 forks pull the meat apart removing any fat as you go.
  7. Pour some of the BBQ sauce over the top the pulled meat. Put the remaining sauce in a bowl so that people can add extra if they wish.
  8. Serve with wraps, tortilla boats or rolls of your choice.

It’s not always glamorous

This was the most dressed up I got all weekend as between the friends birthday celebrations I have; painted the hall way at my Dad’s, cleaned the house, done the ironing, cooked lots of food, been tidying in the garden and more – all in really stuffy clothes. So it was so lovely to to get dressed up and go out n’ drink way too much then get a taxi home 😂🤪😁

Your health

There is nothing better than walking into the sunset 🧡 Today has been a day of sitting and working at my laptop. So this evening the need to get outside not only for my physical health but my mental health was an absolute must. And the bonus of the husband, one son + fish and chips made it perfect.

Remember not to rush, slow down and take in your surroundings.

Nothing better than a moonlight walk the youngest ❤️

It’s always worth looking at something from another perspective.

Keeping busy

It’s been a busy work day but coming back to walk along this beautiful beach makes it worth it.

I have clocked up 550 miles in the last 24 hours and 300 more on the way tomorrow, but it has been worth it. Over the next year I will be making a few of these trips for a specific project all working to improve the health and social care sector in relation to medicines. Working to make positive effective change, going to be a challenging but rewarding project.

And this walk is everything after a long day 🧡

Wandering the quaint streets in Rye and found some excellent antique shops to explore.

Just my son and I with no plan just a desire to explore.

Rye is a beautiful cinque port in East Sussex with cobbled streets and lots of bespoke shops, cafes and restaurants.

If your looking for something British to do when traveling from overseas then this is a great place to visit.
